Chicken-Orzo Salad with Goat Cheese


Mmmm, I'm going to have to try this recipe for Chicken-Orzo Salad with Goat Cheese from Cooking Light soon.

Renee made this for dinner last!! It was really good! Because of my picky tendencies, she left out the red pepper. She also substituted romaine lettuce for the arugla so we ate it on top of the lettuce rather than mixed in. It was really light and summery tasting. The goat cheese definitely makes it.

I made this over the weekend and we really liked it. Next time I would maybe just make a little more of the dressing though.
